Whitt's End Cattle Depot started in 2016 with two cows and two pigs and has grown into a family ranch just west of Cheyenne, Wyoming — grass-fed, 90-day grain-finished beef (100% grass-finished by request), pork, and raw milk, all hormone and antibiotic free. The farm stand at 1249 Happy Jack, open Thursday through Monday, adds homemade ice cream, eggs, cheeses, honey, baked sweets, and soaps, with free shipping on most orders.

Grant Family Farms put Wellington on Colorado's organic map: founded in 1953 by CSU professor Lewis Grant, it became the state's first certified organic farm and grew into one of the country's largest CSA operations, serving about 4,500 members and 150 vegetable varieties at its peak. Hail, drought, and mounting debt forced a Chapter 7 bankruptcy in 2012, with a later attempt at the CSA closing for good in 2017.
