About 25,000 taps spread across 400 acres in Fulton, Montgomery, and Otsego counties feed this operation, which still boils sap over wood-fired evaporators for a deeper flavor. Steve Savage started Peaceful Valley in 1986, having learned the craft as a teenager on his grandfather's farm. Beyond pure syrup, they make maple sugar, cream, candy, fudge, coffee, mustard, BBQ sauce, and a bourbon-barrel-aged syrup. The Johnstown location at 116 LaGrange Road serves breakfast and dinner on Fridays.
