5 Spoke Creamery

5 Spoke Creamery makes small-batch raw cow's-milk cheese on a solar-powered farm in Goshen, the first cheesemaking facility in New York State to run entirely on solar. Founder Alan, a dairy-culture scientist, learned raw-milk cheesemaking in Holland before restoring an old Goshen dairy with his wife Barbara. The grass-fed cheeses reach kitchens like Per Se and ABC Kitchen. Production happens in a restored barn about 57 miles from Manhattan.
