5 Spoke Creamery makes small-batch raw cow's-milk cheese on a solar-powered farm in Goshen, the first cheesemaking facility in New York State to run entirely on solar. Founder Alan, a dairy-culture scientist, learned raw-milk cheesemaking in Holland before restoring an old Goshen dairy with his wife Barbara. The grass-fed cheeses reach kitchens like Per Se and ABC Kitchen. Production happens in a restored barn about 57 miles from Manhattan.

In 2003, Karen and Michael Catapano, a nurse and doctor, respectively, bought a small goat farm in Mattituck. During their second year as goat farmers, they entered the American Cheese Society Annual National Competition and came in first place. Lively Run Goat Dairy

Lively Run is one of the country's longest-running commercial goat dairies, making cheese in Interlaken since 1982. Steve and Susanne Messmer bought the farm in 1995 and kept producing goat, cow, and sheep cheeses with milk from Finger Lakes partner farms. Their Cayuga Blue, Finger Lakes Gold, and Feta have all won American Cheese Society awards. The farm store, tastings, and baby-goat feedings run May through October.
